How long does beer last?
A scientific look at what time and temperature actually do to beer — what 30, 45, 90, and 120 days on a shelf or in a fridge costs you, and why hazy IPAs are the first to fall. Written to be clear for a newcomer and rigorous for a brewer.

The 30-second answer
Beer doesn't really “expire” the way milk does — it goes stale. Two forces drive it: oxygen and heat. Oxygen chemically rewrites the flavor; heat decides how fast. Every 18°F warmer roughly doublesthe speed of staling. That's why a hazy IPA that's electric on day one tastes like wet cardboard and dull juice a few warm months later — and why keeping it cold, from the brewery to your glass, can stretch its best days three to four times longer.
What's actually happening: oxidation
The moment beer is packaged, a slow chemical clock starts. Trace oxygen — dissolved in the liquid and trapped in the headspace of the can — reacts with the beer's malt, hop, and lipid compounds. This is oxidation, the same family of reaction that browns a cut apple. It doesn't spoil the beer; it transforms it, trading bright, fresh notes for tired ones: stale bread, wet paper, sherry, cooked vegetables, a dull darkening of color.
Why hop aroma disappears first
The most fragile thing in a modern IPA is the part you fell in love with: the aroma. The tropical, citrusy, “juicy” smell of a fresh hazy comes from a handful of extraordinarily delicate compounds. They are the first casualties of time and oxygen — often fading within weeks, long before anything tastes overtly “bad.” The beer simply goes quiet, then muddy: the vivid grapefruit-and-passionfruit lift flattens into a generic, slightly sweet, slightly stale bitterness.

Here is the honest picture for a hazy IPA — the most time-sensitive common style — comparing a warm shelf (~70°F / 21°C) against a cold fridge (~38°F / 3°C). These are directional sensory ranges, not lab guarantees: exact rates depend on packaging oxygen, recipe, and handling. But the shape is universal.

Why temperature is the master dial
Every one of these reactions runs faster when it's warm and slower when it's cold — and the relationship is steep, not gentle. As a working rule, the speed of staling roughly doubles for every 18°F (10°C) the beer warms up. Flip it around and the payoff is obvious: keeping beer cold is the closest thing there is to pausing the clock. This is the entire logic of a cold chain — protect the beer at every step, because the damage is cumulative and cannot be undone.
Why hazy IPAs are the most fragile beer you can buy
A hazy IPA is engineered to deliver maximum aroma with minimum harshness — which also makes it maximally exposed. It leans on the most perishable compounds, carries extra oxygen from heavy dry-hopping, has little bitterness to fall back on, and its very haze is a suspension of proteins and polyphenols that oxidation loves to attack. There's even a live biological process — brewers call it hop creep — that can keep working in the can for weeks, quietly changing the beer and, in the worst case, over-carbonating it. All of it slows dramatically in the cold.
Not every beer ages the same
Freshness urgency runs on a spectrum. The more a beer depends on hop aroma and the less it depends on alcohol, roast, or acidity, the faster you should drink it.

How to store beer so it lasts
- —Cold and constant. Fridge from purchase, ideally 33–40°F. Steady beats occasionally-colder.
- —Upright. Minimizes the beer's contact area with the oxygen in the headspace.
- —Dark. UV light skunks hop compounds in minutes. Cans and boxes are your friend.
- —Avoid the warm gaps. The hot car, the loading dock, the un-refrigerated shelf — those excursions do permanent damage. The chain is only as cold as its warmest link.
- —Check the packaged-on date, not the best-by. For hop-forward beer, days since packaging is the number that matters.
